Abstract

Šis išradimas atskleidžia maistinėmis medžiagomis įsotintą emulsiją pagyvenusių žmonių su rijimo sutrikimais (disfagija) poreikiams bei apimančią pagrindinius maisto komponentus, kurios klampumas yra nuo 1000 iki 1500 mPas (matuojant 50 per sekundę šlyties greičiu 25 °C temperatūroje), ir leidžiančią kontroliuojamą įsodrintų maistinių medžiagų išsiskyrimą plonojoje žarnoje. Šiame išradime, pagrindiniai mitybos komponentai (baltymai, nesočiųjų lipidų, polifenolių, vitaminų A, D, C, B9 ir B12, Zn, Se) yra gaunami, juos įterpus į skirtingas VAV emulsijos fazes (VAV: vanduo-aliejus-vanduo, angl. WOW: water-oil-water). Naudojant šią maistinę emulsiją, ir gaminant maistą pacientams su rijimo sutrikimais, gaunami keli privalumai: apsaugomos įsodrintos maistinės medžiagos nuo skilimo technologinio proceso metu, aprūpinama baltymais ir nesočiaisiais riebalais, padidinamas preparato klampumas bei įsodrintų maistinių medžiagų kontroliuojamas atpalaidavimas plonojoje žarnoje virškinimo metu.
