Abstract
본 발명은 야채류 및 과일류의 상압 및 고압에서의 가열살균시, 가열에 의한 야채류 및 과일류의 조직연화현상을 방지하는 방법에 관한 것이다.
본 발명의 방법은 야채류 및 과일류를 가열 살균하기 전에 상온의 알칼리계 칼슘 0.1∼0.5중량% 용액에 10~120분간 침지하는 것을 특징으로 한다.

- 야채류 및 과일류를 상온의 알칼리계 칼슘용액에 10~120분 침지한 후 가열 살균하는 것을 특징으로 하는 야채류 및 과일류의 가열살균시의 조직연화 방지법.
- 제1항에 있어서, 알칼리계 칼슘용액은 패각칼슘 0.1∼0.5중량% 용액인 것을 특징으로 하는 야채류 및 과일류의 가열살균시의 조직연화 방지법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
