Abstract
본 발명은 아세토박터(Acetobacter) 균주를 이용하여 초모(starter)를 제조하고, 그를 이용하여 과일쥬스로부터 미생물 셀룰로오스를 제조하는 방법에 관한 것이다. 본 발명의 미생물 셀룰로오스 제조방법은 (ⅰ) 초모(starter) 제조용 배지에 미생물 셀룰로오스를 생산하는 미생물을 접종하고, 진탕배양하여 초모를 수득하는 공정; (ⅱ) 전기에서 수득한 초모를 과일쥬스에 접종하고 정치배양하여, 미생물 셀룰로오스를 생산하는 공정; 및, (ⅲ) 전기에서 생산된 미생물 셀룰로오스를 후처리, 절단, 포장 및 살균하는 공정을 포함한다. 본 발명에 의해 제조된초모는 입자(particle) 또는 침전물(pellet)의 분산 형태로 된 미생물 셀룰로오스 배양액이므로, 과일로부터 생산되는 미생물 셀룰로오스 배양에의 접종균으로 사용이 용이하고, 동일 품질의 미생물 셀룰로오스를 얻을 수 있다. 또한, 본 발명의 방법으로 제조된 미생물 셀룰로오스는 인체내에서 소화 흡수되지 않는 섬유질을 주성분으로 하고, 물 흡수, 유기물 흡착, 금속이온 흡착 및 겔 형성과 같은 생리작용을 하기 때문에, 식물 섬유가 결핍된 식사 또는 적은 식사를 하는 현대인에게서 유발되는 장 질환인 변비, 맹장염과 대장암 등이나, 대사성 질환인 비만과 당뇨병 등에 예방 효과가 있을 뿐만 아니라, 다이어트 및 건강 식품으로도 유용하게 사용될 수 있다.The present invention relates to a method for producing a starter using acetobacter strain, and to produce microbial cellulose from fruit juice using the same.
