Abstract
본 발명은 식생활의 다변화 및 건강식품을 선호하는 소비자들의 욕구에 부응하기 위하여 개발된 찜어묵의 제조방법에 관한 것으로, 본 발명의 제조공정은 조기새끼등 생선류 70%를 믹서기로 30분간 갈아 분말화시킨 후 전분 25%, 조미료 0.1%, 소금 2%, 다시다 0.4%, 물 2.5%를 배합시킨 다음 교반기로 1시간 정도 반죽시키고, 반죽된 원료를 용량 50kg 보일러에 압력 3kg의 스팀으로 20분 정도 찐후에 성형틀 기계로 여러 형태의 어묵으로 뺀다음 이를 숙성고에서 2시간 가량 숙성을 시켜 제조함을 특징으로 한 것이며, 이와 같이 제조되는 본 발명의 찜어묵은 완제품 상태에서 기존 튀김어묵과는 달리 다시 익히지 않고서도 먹을수가 있으며, 특히 기름에 어묵을 튀기지 않아 어묵을 먹을때 느끼한 감이 없고 인체에 무해한 장점이 있으며, 제품제조시 숙성 공정을 거치므로써 씹을때 쫀득쫀득한 맛을 내게 되어 남녀 노소를 막론하고 누구나 즐겨먹을 수 있는 획기적인 기호 식품일 것이다.The present invention relates to a method of manufacturing steamed fish cakes developed to meet the needs of consumers who prefer dietary diversification and health foods.
