Abstract

본 발명은 익힌 쌀을 주원료로 하여 물만 부어 즉석에서 먹을 수 있도록 한 쌀떡국수의 제조방법에 관한것으로, 세척된 쌀을 2시간 가량 물에 담구어 불린다음 원심분리기에서 탈수를 시키고, 탈수된 쌀 8Kg에 소금 150g정도를 넣어 혼합한 다음 분쇄기에 넣고 1차 분쇄를 시키고, 1차 분쇄된 쌀가루에 물 200cc - 300cc를 부어가면서 미세한 분말로 2차 분쇄를 시킨 후 스테인레스시루에 넣어 고열의 스팀으로 익혀 펀칭기에서 약 7분간 으깬다음 완숙된 쌀덩어리를 스크류형 국수기계에 투입하여 0.7mm 이상의 쌀떡국수로 제조함을 특징으로 한 것이며, 본 발명의 쌀떡국수는 포장용기의 뚜겅을 열고 물만부으면 즉석에서 쫄깃쫄깃하고 신선한 국수를 먹을수 있도록 한 것으로, 종래의 쌀국수와 같이 별도로 익혀서 먹어야 하는 불편한 점을 해소할 수가 있어 여행이나 등산시 야외에서 손쉽게 쌀떡국수를 먹을수 있는 특징이 있으며, 본 발명의 다른 실시예로 분쇄된 쌀에 인삼, 고기, 버섯, 쑥, 칡, 참깨, 들깨 등을 혼합하여 완숙시킨다음 쌀떡국수를 제조하게 되면 특이한 향과 맛을 내는 쌀떡국수가 제공되는 것이다.The present invention relates to a method of manufacturing rice cake noodles which is cooked rice so that water can be eaten immediately by pouring only water.
