  1. 마른오징어의 수세한 몸체부분을 50℃ 전후의 열탕중에 3내지 5분간 침지한 후, 곧 5℃이하의 냉수중에 투입하여 급냉하는 것을 특징으로 하는 가공용 오징어의 표피고정법.
