Claims (2)
- 쇠고기 또는 소뼈에서 얻은 추출액을 건조하여 분말화한 것에 조미료, 향신료, 쇠고기 건조육편, 야채류 및 당면을 첨가하여 즉석 설렁탕을 제조함에 있어 소의 뼈 또는 고기를 마쇄한 후 열수 추출하여 1차열수 추출액을 얻고, 추출박에 2종이상의 분해효소를 첨가하여 분해시킨 다음 가압추출하여 2차추출액을 얻어 1차 추출액과 2차 추출액을 혼합 및 농축한 후 식염, 글루타민산나트륨, 분유, 유당 등을 첨가한 다음 순간 건조하여 분말화함을 특징으로 하는 즉석설렁탕의 제조방법.
- 제1항에 있어서, 쇠고기 정육을 가압솥에서 수증기로 증자한 다음 조쇄하여 파쇄육을 제조하고, 증사시 유출되는 육즙에 식물성 가수분해 단백과 환원당을 첨가하고 pH8-9에서 가열하여 갈변화 반을물질을 제조하여 상기 파쇄육에 첨가한 다음 압축 성형하여 건조육편을 제조하는 방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
