Claims (10)
- 전분의 온도가 최고 100℃까지 도달하고 크게 겔화되지 않도록 선정된 조건하에서, 전분과 물의 출발 혼합물(물은 4-60중량%)을 UHF방사시킨 다음, 처리되지 않은 전분의 결정도보다 반 이하의 결정도를 갖는 전분을 회수하는 것으로 구성된 전분 개량 방법.
- 제1항에 있어서, 출발 혼합물이, 전분과 물의 혼합물에 대한 중량기준으로, 물 25-50중량%를 함유하는 것을 특징으로 하는 방법.
- 제1항 또는 2항에 있어서, UHF방사선이 2450MHz의 주파수를 갖는 것을 특징으로 하는 방법.
- 제1항 내지 3항중 어느 하나에 있어서, 처리시간이 20초 내지 15분인 것을 특징으로 하는 방법.
- 전분이 크게 겔화되지 않고 처리되지 않은 전분의 결정도보다 반이하의 결정도를 갖고 UHF방사선으로 처리하여 개량된 전분.
- 제5항에 있어서, 처리되지 않은 전분의 피이크 브라벤더점도 보다 반이하의 피이크 브라벤더 점도를 갖거나 또는 피이크 브라벤더점도를 갖지 않는 전분.
- 제5항 또는 6항에 있어서, 90℃의 물에 대한 분산성이 처리되지 않은 전분보다 적어도 10%이상 큰 전분.
- 제5항 내지 7항중 어느 하나에 있어서, 처리되지 않는 전분보다 더 전분분해 효소의 공격을 받기 쉬운 전분.
- 제1항 내지 4항중 어느 하나에 있어서 처리된 전분이 수용성 슬러리로 만들어진 다음 효소 가수분해되는 것을 특징으로 하는 방법.
- 제9항에 있어서, 처리된 전분이 α-아밀라제 및 β-아밀라제에 도입되는 것을 특징으로 하는 방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
