Claims (1)
- 식물성 단백질 산물의 수용성을 증가시키는 방법에 있어서, 건조 고체 기준으로 적어도 중량비 30%의 식물성 종자 단백질과 균질기 내부에 있는 급송류의 pH를 약 6.5-9.0이 되도록 유지하기에 충분한 양의 염기를 함유하고 있는 급송류가 들어있는 균질기에 수성식물성 종자급송류를 공급하고, 이와 같이 균질기에 들어 있는 수성 급송류를 섭씨 약 50-150도의 온도에서 계속적으로 압력을 가하고 공동(空洞) 순환시키므로써 식물성 종자 단백질의 수용성을 증가시킨 다음, 이들로부터 수용성이 증가된 식물성 산물을 회수함을 특징으로 하는 식물성 단백질 산물의 수용성을 증가시키는 방법.
