지방 분해는 세포 내의 트리글리세리드를 글리세롤과 유리 지방산으로 가수 분해되는 것이며, 글리세롤과 유리 지방산은 혈류 또는 배양 배지로 방출된다. 지방 분해는 모든 세포에서 발생하지만 흰색과 갈색 지방 조직에서 가장 많이 일어난다. 지방 분해가 원활하게 이루어지지 않는 경우, 세포 내 지질 축적을 증가시켜 비정상적인 세포 생리학, 고지혈증 및 인슐린 저항성을 초래하게 된다.
