Claims (5)
- 키조개 관자를 세척하는 단계(단계 1);
상기 세척한 키조개 관자를 진공포장 후 예냉하는 단계(단계 2); 및
상기 예냉된 키조개 관자를 급속동결시키는 단계(단계 3);
를 포함하는 키조개 관자의 급속냉동방법.
- 제 1항에 있어서, 상기 단계 2는,
상기 세척한 키조개 관자를 진공포장한 후 -3℃에서 15~30분 동안 예냉하는 키조개 관자의 급속냉동방법.
- 제 1항에 있어서, 상기 단계 3은,
상기 예냉된 키조개 관자를 -45℃ ~ -80℃에서 급속동결시키는 키조개 관자의 급속냉동방법.
- 제 3항에 있어서,
상기 급속동결은 상기 예냉된 키조개 관자를 -45℃에서 10~60분 동안 급속동결시키는 방법 또는 -80℃에서 10~30분 동안 급속동결시키는 방법 중 어느 하나인 키조개 관자의 급속냉동방법.
- 제 1항 내지 제 4항 중 어느 하나의 급속냉동방법으로 급속냉동되는 키조개 관자.
