흑달래 환을 제조하기 위하여 뿌리째의 달래를 시장에서 3kg 가량 구입하여 준비하고, 달래의 알뿌리만을 남도록 줄기를 비롯한 알뿌리 이외의 부분을 제거하였다. 이렇게 선별된 달래의 알뿌리를 7mm 간격의 체에 걸러 7mm 이상의 크기를 가지는 달래의 알뿌리만 선별하였다(도 2). 상기와 같이 체를 통해 걸러진 달래의 알뿌리들은 키를 이용하여 한 번더 선별하는 과정을 거치도록 하여 보다 균일한 사이즈를 가지고 알이 꽉 찬 것들로만 걸러내었다(도 3). 상기 선별과정을 거친 후 달래의 알뿌리는 물에서 세척을 하고 건져 내었다(도 4 내지 도 5).
