비교예 1 내지 5는 상기 실시예 1 내지 3과 동일한 방법으로 음료를 제조하였으나 안정제의 조성을 변화시켜 제조하였다. 안정제는 음료에 사용되는 대표적인 안정제인 하이 아실 젤란검(high acyl gellan gum), 잔탄검, 펙틴, 대두 다당류를 사용하여 비교예를 제조하였다. 실시예 1 내지 3을 포함한 비교예의 조성은 표 1에 나타내었다. 제조에 사용된 안정제는 시중에서 판매되는 안정제를 구입하여 사용하였다.Comparative Examples 1 to 5 were prepared in the same manner as in Examples 1 to 3, but by changing the composition of the stabilizer. 실험예Experimental Example 1: 침전 안정성 확인 1: Confirmation of precipitation stability
본 발명자들은 본 발명에 따른 음료 조성물의 침전 안정성을 확인하기 위하여 실시예 1 내지 3과 비교예 1 내지 5를 제조하여 40℃, 75% 습도 조건에서 4개월간 관찰하여 침전 안정성을 확인하였으며 그 결과를 하기 표 2에 나타내었다.The present inventors prepared Examples 1 to 3 and Comparative Examples 1 to 5 in order to confirm the precipitation stability of the beverage composition according to the present invention was observed for 4 months at 40 ℃, 75% humidity conditions to confirm the precipitation stability and the results It is shown in Table 2 below.

상기 실험은 대전 지역에 거주하는 20~40대의 음료 타입 건강기능식품 섭취 경험이 있는 사람 20명을 대상으로 바디감, 향 및 맛에 대해 조사한 값을 하기 표 3에 나타내었다. 관능평가는 제조 후 10일이 경과한 실시예 1 내지 3 및 비교예 1 내지 5에 대하여 흔들어서 섭취하였을 경우와 그대로 섭취하였을 경우로 나누어 실험하였다.The experiment is shown in Table 3 to the value of the body, aroma, and taste of 20 people who have 20 to 40 beverage type health functional food intake experience living in Daejeon area. 실시예Example 4 내지 6의 제조: 세라마이드 함유 음료의 제조 Preparation of 4 to 6: Preparation of Ceramide-Containing Beverage
정제수를 가열한 후 로우 아실 젤란검을 0.01 중량%을 넣고 용해시켜 실시예 4 내지 6의 안정제로 활용하였다. 완전히 용해되어 용액이 투명해지면 침전을 유발하는 물질을 알아보기 위하여 세라마이드를 반드시 포함하고, 콜라겐과 계관 추출물 중 하나 혹은 둘 모두를 포함하지 않는 실시예 4 내지 6을 배합하였으며, 세라마이드와 콜라겐, 계관 추출물을 모두 포함하는 음료의 조성은 상기 실시예 2를 참고하였다. 침전에 영향을 주지 않고 완전히 용해되는 당류 및 향료는 함께 배합하였으며 배합이 완료되면 균질, 살균 과정을 거쳐 유리병에 담아 음료를 제조하였다. 제조에 사용된 젤란검 및 잔탄검은 시중에 유통되는 제품을 구입하여 사용하였으며 파인애플 세라마이드는 환선제약주식회사(丸善製藥株式會社)의 파인애플 세라마이드 유화액을, 콜라겐과 계관 추출물은 API사의 원료를, 당류 및 향료는 시중에 유통되는 제품을 구입하여 사용하였다.After heating purified water, 0.01% by weight of low acyl gellan gum was added to dissolve and used as a stabilizer of Examples 4 to 6. 본 발명자들은 상기 실시예 4 내지 6과 동일한 방법으로 음료를 제조하였으나 침전 방지제의 역할을 알아보기 위하여 젤란검 및 잔탄검을 제외한 비교예를 제조하였으며 그 조성은 하기 표 4에 나타내었다.The present inventors prepared a beverage in the same manner as in Examples 4 to 6, but prepared a comparative example except for gellan gum and xanthan gum in order to determine the role of the precipitation inhibitor and the composition thereof is shown in Table 4 below.
