Claims (4)
- 유산균을 함유하는 초콜릿의 제조방법에 관한 것으로서, 상기 제조방법은 용해 탱크에서 55℃~65℃에서 12 내지 24시간 동안 초콜릿을 녹이는 용해단계; 상기 용해된 초콜릿을 노즐을 통하여 흘려 보내면서 중심부 모핵의 표면에 골고루 초콜릿 코팅을 하는 제 1 코팅단계; 30℃ 이하의 온도에서 유지함량이 20~26%인 분말 초콜릿에 상기 분말 초콜릿 중량의 0.5 내지 2 중량퍼센트의 유산균 분말을 혼합하여 소량씩 상기 단계에서 수득된 센터물(모핵) 표면에 분산시켜 센터물(모핵)을 코팅하는 유산균 코팅단계; 상기 용해단계에서 생성된 초콜릿을 노즐을 통하여 상기 유산균 코팅단계에서 생성된 초콜릿에 흘려 보내어 유산균 코팅을 감싸는 제 2 코팅단계; 상기 제 2 코팅단계에서 생성된 초콜릿 표면에 3℃ 내지 12℃의 냉풍을 가하여 냉각하는 단계; 30℃이하의 온도에서 상기 냉각단계에서 생성된 초콜릿에 초콜릿을 계속 코팅하여 초콜릿 층을 형성하는 제 3 코팅단계; 상기 제 3 코팅단계에서 생성된 초콜릿에 30 내지 33 ℃의 온풍을 가하고, 초콜릿을 이용하여 상기 초콜릿의 표면을 고르게 하는 면고르기 단계; 상기 면고르기 단계에서 생성된 초콜릿을 18 내지 23 ℃ 의 룸에서 20 내지 30 시간 동안 숙성시키고, 상기 초콜릿의 온도를 18 내지 23 ℃로 조절하는 1차 숙성단계; 상기 1차 숙성단계에서 생성된 초콜릿의 표면에 광택이 나게 하는 내츄럴 폴리싱 단계; 및 상기 내츄럴 폴리싱단계에서 생성된 초콜릿을 18 내지 23 ℃의 룸에서 20 내지 30 시간 동안 보관하는 2차 숙성단계; 로 이루어지는 유산균 코팅 초콜릿의 제조방법에 관한 것이며,
