Claims (7)
- (d) 청국장을 만드는데 사용되는 콩을 깨끗이 세척하고, 상기 세척한 콩을 물에 7 내지 16시간 불리는 단계;(e) 상기 (d) 단계에서 물에 불린 콩을 고온에서 삶는 단계;(f) 상기 삶은콩을 30℃ 이하로 식히는 단계;(g) 상기 식힌 삶은콩에 2 내지 5중량%의 청국장균을 첨가하는 단계;(h) 상기 청국장균이 첨가된 삶은콩에 2 내지 5중량%의 누에분말을 첨가하는 단계; 및(i) 상기 청국장균 및 누에분말을 첨가한 콩을 35 내지 50℃의 온도에서 15 내지 36 시간 동안 발효시키는 단계;를 포함하는 것을 특징으로 하는 누에를 이용한 청국장 제조 방법.
- 제 1항에 의해 제조된 누에를 이용한 청국장.
- 제 1항에 있어서,(h') 상기 청국장균 및 누에분말이 첨가된 삶은콩에 2 내지 5중량%의 뽕잎가루를 첨가하는 단계를 더 포함하며,상기 (i) 단계는, 상기 청국장균 및 누에분말과 뽕잎가루를 첨가한 콩을 35 내지 50℃의 온도에서 15 내지 36 시간 동안 발효시키는 것을 특징으로 하는 뽕잎 과 누에를 이용한 청국장 제조 방법.
- 제 1항에 있어서,상기 (d) 단계 이전에, 뽕잎 성분을 우려낸 뽕잎 물을 준비하는 단계를 더 포함하고,상기 (d)단계는, 청국장을 만드는데 사용되는 콩을 깨끗이 세척하고, 상기 세척한 콩을 상기 뽕잎 물에 7 내지 16시간 불리며,상기 (e)단계는, 상기 (d) 단계에서 뽕잎 물에 불린 콩을 100℃ 가량의 온도에서 상기 우려낸 뽕잎 물이 다 스며들도록 삶는 것을 특징으로 하는 뽕잎과 누에를 이용한 청국장 제조 방법.
- 제 4항에 있어서, 상기 뽕잎 물을 준비하는 단계는,(a) 건조 뽕잎을 명주 주머니에 싸서 건조 뽕잎의 중량의 수배 되는 물에 침적시키는 단계;(b) 상기 뽕잎을 침적시킨 물을 100℃ 가량의 온도에서 끓여 뽕잎 성분이 우려난 뽕잎 물을 준비하는 단계; 및(c) 상기 뽕잎 성분이 우러난 뽕잎 물을 식히는 단계; 로 이루어지는 뽕잎과 누에를 이용한 청국장 제조 방법.
- 제 4항에 있어서,(h') 상기 청국장균 및 누에분말이 첨가된 삶은콩에 2 내지 5중량%의 뽕잎가루를 첨가하는 단계를 더 포함하며,상기 (i) 단계는, 상기 청국장균 및 누에분말과 뽕잎가루를 첨가한 콩을 35 내지 50℃의 온도에서 15 내지 36 시간 동안 발효시키는 것을 특징으로 하는 뽕잎과 누에를 이용한 청국장 제조 방법.
- 제 3항 내지 제 6항 중 어느 한 항에 의해 제조된 뽕잎과 누에를 이용한 청국장.
