Claims (6)
- 배양탱크에 물을 충진하고, 미생물 먹이가 되는 설탕, 이스트, 포도당, 소금, 황산마그네슘 7 수화물(MgSO47H2O), KH2PO4 배지를 투입하는 단계;섭씨 100 도 온도에서 20-30 분 정도 가열하여 멸균시키는 단계;멸균된 배양 탱크 내의 혼합물을 섭씨 35도 될때 까지 냉각시키는 단계;발효 및 탈취에 효과적인 종균을, 물을 제외한 전체 중량 대비, 20-25중량% 투입하는 종균 투입 단계;상기한 종균 투입 후, 섭씨 30-35 도, pH 4-5 유지하면서 4 - 5 일 배양하여 발효시키는 단계;상기한 발효된 배양액에 쌀겨를 혼합하는 단계;상기 혼합물을 섭씨 30-35 도에서 약 3 - 6일 간 교반하면서 배양하는 단계;그리고 일반 자연건조, 송풍건조 또는 자외선 건조 방법 중 어느 한 방법을 이용하여 건조 후 수분이 10-13 중량%가 되도록 건조하는 단계;건조 단계가 끝난 후, 일정한 크기의 분말로 분쇄하는 단계;분쇄물을 포장하는 단계를 포함하며,상기한 배양 단계에서의 pH 유지는, CaCO3 첨가로 조절 하며,상기한 종균은, 바실러스 서브틸리스(Bacillus subtilis), 바실러스 코아귤란스(Bacillus coagulance), 바실러스 나토(Bacillus natto), 바실러스 아밀로리쿠에파시엔스(Bacillus amyloliquefaciens), 락토바실러스 아시도필러스(Lactobacillus acidophilus), 락토바실러스 패칼리스(Lactobacillus faecalis), 클로스트리디움 부티리쿰(Clostridium butyricum)와, 효모인 사카로마이세스 세르비시아에(Saccharomyces cerevisiae), 곰팡이균인 아스파길러스 오리자에(Aspergillus oryzae)균을 포함하며,상기한 바실러스 서브틸리스(Bacillus subtilis), 바실러스 코아귤란스(Bacillus coagulance), 바실러스 나토(Bacillus natto), 바실러스 아밀로리쿠에파시엔스(Bacillus amyloliquefaciens), 락토바실러스 아시도필러스(Lactobacillus acidophilus), 락토바실러스 패칼리스(Lactobacillus faecalis), 클로스트리디움 부티리쿰(Clostridium butyricum)의 합계 세균수는 그램당 2×108~8×109/g인 것을 사용하며, 효모인 사카로마이세스 세르비시아에(Saccharomyces cerevisiae)는 그램당 4×108~9×108/g 인 것, 아스파길러스 오리자에(Aspergillus oryzae)균은 그램당 1×108~8×108 /g 의 것을 투입하며, 상기한 세균과 효모와 곰팡이인 아스파길러스 오리자에 혼합을 무게 비로 하면, 세균은 20-40 중량%, 효모는 40-60 중량%, 곰팡이는 10-30 중량% 로 혼합하여 투입하며,상기한 발효된 배양액에 쌀겨를 혼합하는 단계에서, 배양액을 20-30 중량%로 하고 쌀겨는 80-70 중량%로 하는 것을 특징으로 하는 분말 발효제의 제조 방법
