Claims (5)
- (a) 치커리뿌리를 분쇄하여 즙액을 제조하고 당농도가 50∼150g/L인 상기 치커리즙액에 슈도모나스 속 균주 YN-47(KCTC 0711BP)에서 분리한 이눌린가수분해효소를 기질의 단위무게당 10∼30unit첨가하여 40∼60℃에서 20∼30시간 반응시켜 치커리올리고당을 제조하는 단계;(b) 열정제수 또는 막여과수에 상기 (a)단계의 치커리올리고당을 0.01∼30 중량%를 첨가하고 영양원 0.01∼10 중량%, 식이섬유 0.01∼5 중량%, 생약제재 0.01∼10 중량%, 천연과즙 0.1∼5 중량%를 단독으로 첨가하거나 2종 이상을 혼합하여 첨가하는 단계;(c) 상기 (b)단계의 혼합액에 산미제 0.05∼5중량%와 감미제 0.1∼10 중량%를 가하고 용해시킨 후 열정제수 또는 막여과수에 비타민0.0001∼5 중량%와 무기물 0.01∼1.0 중량%를 용해시킨 혼합액을 첨가하여 혼합하는 단계;(d) 상기 (c)단계의 혼합액에 안정화제 0.01∼3.0 중량%, 교미제 0.01∼1.0 중량% 및 아미노산0.05∼5 중량%을 가하여 균질화시키는 단계;(e) 상기 (d)단계의 균질화한 액에 카페인 0.001∼10 중량%, 착향제 0.05∼0.1 중량% 및 보존제 0.05∼5 중량%를 가하는 단계;(f) 상기 (e)단계의 혼합액을 막여과 하고 1,000∼10,000×g에서 20∼50분간 원심분리하여 상등액을 제조하는 단계;(g) 상기 (f)단계의 상등액을 100∼130℃에서 10∼40분간 멸균하는 단계;(h) 상기 (g)단계의 멸균된 액을 3∼10℃에서 10∼48시간 동안 저온 숙성하는 단계;(i) 상기 (h)단계의 숙성된 액을 병이나 캔에 주입하는 단계의 결합을 특징으로 하는 치커리올리고당을 함유하는 기능성 음료의 제조방법.
- 제 1항에 있어서, 상기 영양원은 벌꿀 또는 로얄제리임을 특징으로 하는 치커리올리고당을 함유하는 기능성 음료의 제조방법.
- 제 1항에 있어서, 상기 식이섬유는 치커리 또는 알로에 추출물임을 특징으로 하는 치커리올리고당을 함유하는 기능성 음료의 제조방법.
- 제 1항에 있어서 상기 생약제재는 구기자, 오가피, 백출, 백작약, 녹곽, 홍삼, 인삼, 음양곽, 우황, 황정을 단독으로 첨가하거나 2종 이상을 혼합하여 첨가함을 특징으로 하는 치커리올리고당을 함유하는 기능성음료의 제조방법.
