본 발명은 치커리를 이용한 커피대용 치커리 인스탄트차의 제조방법에 관한 것이다. 보다 상세하게는 종래의 치커리차를 제조함에 있어서 세척, 절단, 건조, 볶음공정에 증숙공정을 추가하여 만들어진 치커리볶음을 열수를 통하여 추출한 다음 일정한 농도로 농축공정을 거쳐 만들어진 치커리추출물에 부형제로서 덱스트린과 커피향을 아라비아검과 함께 첨가하여 고속으로 믹서하여 향성분을 치커리추출물에 유화시킨다음 분무건조공정을 통해 인스탄트화한 제품으로 여기에 식물성크림과 설탕을 일정한 비율로 혼합하여 자판기용(덕용포장) 및 1회용으로 소비자가 언제 어디서나 간편히 음용(12g티백)할 수 있도록 하였다.The present invention relates to a manufacturing method of chicory instant tea for coffee using chicory. 이상의 비교예 1 및 실시예 1을 통하여 치커리 증숙유무에 따른 치커리 볶음의 색도 및 치커리볶음의 침출시간별 특성에 있어서 처리별 치커리 볶음 분말색도는 침출시간별 색도도 볶음분말처리와 비슷한 경향을 나타냈다. 증숙한 볶음치커리의 Brix가 침출시간이 지나면서 일반 치커리 보다 훨씬 높게 나타나는 것은 추출공정에서 수율을 높일 수 있는 장점이 있다. 또한 표 3에서 보듯이 치커리의 맛과 향에서도 실시예 1이 좋은 것으로 나타났다.According to Comparative Example 1 and Example 1, the color of chicory roast powder by treatment and the color of chicory roast by chicory roasting with or without chicory steaming showed similar tendency as that of roasting powder.
