従来、食品製造においては、微生物の増殖による食品の腐敗や変質を防ぐための組成物が使用されている。特許文献1には、脂肪酸モノエステル、酸またはキレート化剤、食品グレードの界面活性剤及び媒体を含有する食品用殺菌剤組成物が記載されている。特許文献2には、フィチン酸及び乳化剤を含有する乳入り飲料用乳化安定剤が記載されている。特許文献3には、ホースラディッシュ由来の抗菌性物質と、有機酸又はその塩、アミノ酸、低級脂肪酸エステル、シュガーエステル、ビタミンB1エステル、重合リン酸塩、フィチン酸、エタノール等から選択される1種又は2種以上とを含有する食品用保存剤が記載されている。特許文献4には、エタノール、グルコン酸ナトリウム、カプリン酸、カプリル酸モノグリセリド及びカプリン酸モノグリセリド、pH調整剤、水を含有し、水溶液の酸度が0.1〜0.9である殺菌剤組成物が記載されている。 2. 対象菌には、4種の乳酸菌Weissella viridescens、Leuconostoc mesenteroides、Leuconostoc citreum、及びLeuconostoc pseudomesenteroidesを用いた。対象菌のシングルコロニーを、白金耳を用いて数コロニー釣菌し、TSB培地に植菌して30℃で20時間種培養したものを乳酸菌液(107cfu/mL)とした。得られた乳酸菌液を、滅菌済み精製水10mLに0.1mL混合し、さらにこれを10倍希釈した。4種の乳酸菌の10倍希釈液を等量混合してサンプル菌液を調製した。(Sterilization or bacteriostatic property evaluation)

滅菌プラスチックシャーレを二群に分けた。一方の群では、各液状組成物を1.0mLずつ空のシャーレに入れ、コンラージ棒で均一に塗布し、次いでこれにサンプル菌液を1.0mL接種し、20秒間コンラージ棒で混合しながら塗り広げた(0h群)。もう一方の群では、各液状組成物を1.0mLずつ空のシャーレに入れ、コンラージ棒で均一に塗布した後、安全キャビネット内で18時間風乾し、水分とエタノールを完全に蒸発させた。これにサンプル菌液を1.0mL接種し、20秒間コンラージ棒で混合しながら塗り広げた(18h群)。初発菌数は105〜106cfu/mLに調整した。
