Abstract

PURPOSE:To prolong a period of retaining freshness to 3-5 days by container transportation and eliminate necessity of equipment cost of a cold reserving cabinet, by cooling perishable foods, such as vegetables, fruits or flowering plants, in vacuum cooling cabinet in a vacuum and replacing the interior of the cabinet in the evacuated state with a gas. CONSTITUTION:Perishable foods, such as vegetables, fruits or flowering plants, are contained in a cold reserving container, as desired, containing an ethylene or CO2 adsorbent previously placed therein and the above-mentioned container is then placed in a vacuum cooling cabinet and cooled in a vacuum. The interior of the cabinet in the evacuated state is then replaced with a gas, preferably a gas consisting of 1-15% CO2, 25-50% O2 and remainder of N2 and then a 1-5% aqueous solution of calcium chloride is sprayed on the perishable foods in replacing with the gas. Alternatively, the cold reserving container is placed in a vacuum cooling cabinet and evacuated and the gas is introduced to cool the perishable foods with the cold heat. The cold reserving container is taken out of the vacuum cooling cabinet and transported to consuming districts.
