Perishable animal and vegetable materials subject to respiratory deterioration changes on storage in air containing normal quantities of oxygen and carbon dioxide, are stored in an atmosphere containing an amount of carbon dioxide greater than that found in ambient air and an amount of oxygen less than that found in ambient air, which atmosphere is continuously supplied from individual sources to a space containing the materials to be preserved and the escape of the atmosphere from the space is continuously permitted. Such atmospheres contain 1-10% by volume of oxygen, 1-15% by volume of carbon dioxide and an inert gas such as nitrogen, have 25-100% relative humidity (preferably 85-100%) and are maintained at a temperature of from 29‹ to 120‹F. (preferably 29‹-55‹F.). The gaseous constituents may be supplied from gas cylinders 14, 15 and 16 to a refrigerator 10; the humidity and temperature of the gaseous atmosphere introduced is regulated by a water bath 24, through which the atmosphere is passed, and evaporator coils 11, respectively. The atmosphere escapes through leaks diagrammatically illustrated by the passage 27. In a storage space subject to continual contact with the external atmosphere by repeated opening and closing of a door, it may be unnecessary to supply oxygen from gas cylinder 14. Animal and vegetable materials mentioned: apples, grapes, berries, tomatoes, peaches, pears, oranges and bananas; potatoes, carrots, celery, asparagus, onions, beans and peas; milk, butter, cheese and eggs; meat and meat products; grains, nuts, cut flowers, flower bulbs and tobacco.
