Abstract

PURPOSE:To prepare a frozen food giving a surface like a roasted food by the cooking with a microwave oven, by contacting a seasoned raw food with a substance having high osmotic pressure via a semipermeable membrane to effect dehydration of the food and freezing the dehydrated food. CONSTITUTION:A dehydration sheet 1 is produced by sealing a gelatinous substance 3 having high osmotic pressure (e.g. aqueous solution of sucrose) and a polymeric water-absorbent 4 (e.g. acrylic acid polymer) between a pair of semipermeable membranes 2, 2 such as cellophane. A raw food 6 such as meat or fish is seasoned with a seasoning, wrapped with a semipermeable membrane 5 such as cellophane and packaged with the above sheet 1 to contact the food with the high osmotic pressure substance 3 via the semipermeable membranes 2, 5. When the water-content of the food reaches 5-20%, the food is frozen.
