Abstract

PURPOSE:To obtain dried sea tangle having excellent palatability, by freezing air-dried sea tangle absorbing water in a given proportion and freeze vacuum drying the frozen sea tangle while pressurizing the sea tangle under a pressure within a specific range and softening hard tissues thereof while maintaining natural flavor as much as possible. CONSTITUTION:Water in an amount of 90-200pts.wt., preferably, 120-180pts.wt. is absorbed in 100pts.wt. raw material sea tangle having preferably about 0.4-2mm thickness in an air-dried state and then frozen. In this case, the frozen state can be kept even at a relatively high temperature of >=-10 deg.C by desalting the air-dried sea tangle until the salt content therein attains <=1-2% if the raw material sea tangle contains a large amount of salt without seasoning the raw sea tangle. The sea tangle in the frozen state is then freeze vacuum dried while being pressurized under 0.05-0.01kg/cm<2> pressure. Thereby the aimed confectionery-like dried sea tangle having the above-mentioned characteristics and taste, texture and shape with excellent palatability is obtained.
