A large number of yakitori skewers (hereinafter simply referred to as yakitori skewers) with raw meat skewered on them are attached at intervals to an endless chain, and the endless chain is conveyed between heat sources such as heat radiation burners to sequentially grill the meat. There are two types of automatic yakitori machines: those with a horizontal heat source and those with a vertical heat source.
For example, Special Publication No. 54-6630 and Utility Model Publication No. 56-
An automatic yakitori machine with a vertical heat source, such as the one seen in Publication No. 33476, has the advantage that, compared to a horizontal heat source type, it is able to grill meat almost smokelessly and deliciously without dropping the meat juices into the heat source. It is excellent in that it can use the rising heat generated by the heat source to preheat the yakitori skewers before they are transported between the heat sources and subjected to grilling. It occupies the mainstream. In addition, in this automatic yakitori machine with a vertical heat source, in order to store the above-mentioned rising heat and preheat the yakitori skewers more effectively, for example, in the yakitori machine of the aforementioned Japanese Patent Publication No. 54-6630, On the other hand, in the Yakitori machine of Utility Model Publication No. 56-33476, reflective plates are placed above the left and right heat sources in a figure-eight shape. By installing them, each device is designed to increase the heat storage effect and make it possible to grill yakitori more efficiently.

However, the above-described heat storage means using a cavity has a problem in that it cannot exhibit a sufficient heat storage effect because the rising heat is diffused within the cavity and is rapidly radiated from the exhaust pipe provided at the top of the cavity. In addition, in the case of the above-mentioned figure-eight reflector, the rising heat rises rapidly due to the chimney effect of the tapered reflector, so the upper end portions of both reflectors are made narrowest. The problem is that the temperature distribution suitable for preheating is only in a very limited area of The method also failed to sufficiently preheat the yakitori skewers.

The present invention was devised in view of the above-mentioned points, and its purpose is to efficiently store the heat rising from the heat source so that the yakitori skewers transported by the endless chain can be stored relatively efficiently. The purpose of this invention is to provide a heat storage device for an automatic yakitori machine that is devised so that it can be preheated at a high temperature for a long time.In order to achieve this purpose, the present invention has developed an endless chain for conveying yakitori skewers that is conveyed from the top to the bottom. The left and right heat radiation type burners, which are vertically opposed to each other so as to sandwich the conveyance path of A horizontal part is formed by bending at a right angle toward the end of the chain, and a vertical part is formed by bending the tips of both horizontal parts at a right angle upward again so as to be parallel to and close to the transport path of the endless chain. The left and right heat storage plates comprising the above are installed facing each other.

2 and 4, reference numeral 50 denotes a guide plate attached to the upper end of the right heat storage plate 31, which is formed into an elongated shape, and is elevated from the entrance 40a through both heat storage plates 30, 31. The hot air and smoke are exhausted to the outside through an exhaust port 51 provided on the upper surface of the main body 10 along this guide plate 50. In addition, in FIGS. 1 and 2, the skewering device is generally designated by the reference numeral 60, and the heat radiation type burners 20, 2
The yakitori skewers CK baked in 1 hour are automatically removed from the skewer receiving pipe 16 by the skewer removing device 60 and dropped into a suitable container (not shown) on the holder 10a. However, a detailed explanation of its configuration will be omitted.

Since the heat storage device for an automatic yakitori machine according to the present invention has the configuration described above, the hot air generated from the heat radiation type burners 20, 21 is directed from the yakitori chamber 40d to the retention chamber 40c as shown by the arrow in FIG. Once it rises, it hits the horizontal portions 30B and 31B, turns around, and stays there, raising the temperature in the retention chamber 40c.
Next, the hot air passing through the retention chamber 40c reaches both vertical portions 3.
It intensively rises in the narrow heat storage chamber 40b between 0C and 31C, is guided by the guide plate 50 from the import entrance 40a, and is exhausted to the exhaust port 51 side. For example, when the temperature is adjusted to 200°C, the temperature in the retention chamber 40c will be around 250°C to 280°C, and in the narrow heat storage chamber 40b, this will be at a maximum of 300°C.

As described above, according to the heat storage device of the present invention,
The raw yakitori skewers that are carried from above between the left and right heat storage plates by the endless chain are sufficiently preheated in the vertical space where the temperature is highest, that is, in the heat storage chamber, to a semi-cooked state. Since the yakitori can be conveyed through the retention chamber between the heat radiation type burners and roasted, it is possible to provide delicious yakitori that is well-cooked all the way to the core. Since there is a horizontal part that reverses and retains the rising heat, the rising heat generated from the left and right heat radiation type burners is stored, making it possible to effectively preheat the yakitori skewers, and also to store it in this horizontal part. Since the vertical sections connected to each other are constructed with narrow facing distances, the rising heat is concentrated between these sections, further enhancing the heat storage effect, and the temperature of the yakitori skewers being conveyed from above is higher than that of the actual grilling by the heat radiation burner. Because it can be preheated at a high temperature and for a relatively long time, combined with the preheating that takes place at a later stage using the residual heat, it is possible to fry the yakitori skewers to a completely half-cooked state. Therefore, it is possible to achieve practical effects such as shortening the time required for grilling yakitori skewers and adjusting the heating temperature of the heat radiation burner to a low level.
