Abstract

PURPOSE:To obtain a powdery or granular liver food almost free from the characteristic taste and smell of liver, by treating the powder of an edible animal liver with a solution of a specific coating agent in a fluidized-layer granulating drier. CONSTITUTION:The liver of an edible animal (e.g. liver of cattle, pig, etc.) is dried and pulverized under mild condition preventing the influence of heat and oxygen, e.g. by using a vacuum freeze-drier, etc. The dried powder is treated with a solution of zein or casein or a composition composed mainly thereof, in a fluidized-layer granulating drier to obtain a powdery or granular liver food. The characteristic smell of liver is eliminated because the component of the liver is coated with zein or casein and is protected from the influence of oxygen. It can be mixed and heated in various food raw materials without causing the breakage of the coating film and the generation of the liver smell.

It is a well-known fact that the livers of arnivorous animals, such as those of cows, pigs, chickens, eels, cod, and sharks, all contain highly nutritious components. This fact is also supported by the Japanese Food Composition Table.

In particular, the livers of livestock animals such as cows and pigs are produced in large quantities, are inexpensive, and are rich in nutritional value, so they are ideal not only as ordinary side dishes, but also especially as medical foods.
Many people avoid it because it has a unique odor and taste. This tendency is especially noticeable in women and growing children who tend to be anemic and need nutrients contained in the liver.

By the way, the commonly used cooking method for eating liver is to make it into a grilled dish such as horumon-yaki or yakiniku, but the important nutritional components in the liver are often destroyed by heat and lose their effectiveness. For this reason, raw food is recommended as a therapeutic food especially for anemia, but in this case the difficulty of eating is even more important. Therefore, it can be said that making the liver into a food that is easy to consume and has a high nutritional value is a solution to the important problem of maintaining and improving the health of the people.

As a result of various studies aimed at solving the above-mentioned problems, the inventors of the present invention discovered that by coating the end of the liver with an edible protein, especially a film-forming and edible protein such as zein or casein, the inventors found Distinctive odor disappears,
Furthermore, even if this is mixed into various food materials, such as when preparing hamburger steak or curry roux, and is baked or boiled, there is no risk of the film breaking and producing a liver odor. It has been discovered that this is an ideal liver food that does not make the eater aware or aware that it is a liver food. In particular, both zein and casein used as coating agents are insoluble in acids, and the membranes are dissolved and digested only when they reach the intestines, so there is the added benefit that you will not feel the unpleasant liver odor after ingestion. It has many advantages.

The IHI&a food according to the present invention is in the form of a tasteless and odorless powder or fine granules with almost no odor or taste of liver, and when pig liver is used as a raw material, 1 g of it corresponds to about 3 g of raw liver, 1g contains 0.4 mg of iron and vitamin A equivalent to 390 international units.

In the case of children, if they ingest 183 to 5 g of ice crystals, they will have ingested more than half of their daily requirements for at least iron and vitamin A. Moreover, considering that the liver contains many important nutritional components other than the above-mentioned iron and vitamin A, and that these nutritional components are of high quality and easily absorbed and utilized, the present invention It can be said that the development of a new liver food by the author will greatly contribute to improving the nutrition of the people.

In the liver food according to the present invention, the film is hardly destroyed even when subjected to various processing methods under normal cooking conditions, such as steaming, boiling, frying, roasting, or searing.
It can be used as an ingredient in virtually any meat or meat-containing food. For example, when cooking a regular hamburger steak, the flavor of the food prepared by adding 3 to 5g of the food of the present invention to each hamburger steak is as follows:
Since it is exactly the same as cooking without adding the product of the present invention and contains liver components equivalent to 6 to 10 g of raw liver, its nutritional effect is extremely large.

As the raw material 1 for the food according to the present invention, the liver of any animal, whether it is terrestrial or marine (excluding, of course, those whose liver contains toxic components such as some types of pufferfish),
Considering the abundance and availability of raw materials, livers from livestock animals such as cows and pigs are practical. However, the livers of fish such as sharks and lampreys can also be valuable raw materials, especially in that they contain large amounts of vitamin A and lipids that are useful for health. Of course, these raw livers must not be affected by parasitism, and moreover, they are preferably as fresh as possible.

Prior to the coating process, the liver, which is the raw material for the food of the present invention, is dried and powdered by a mild method that is not easily affected by heat and oxygen, such as vacuum freeze-drying, but if desired, it may be ground in advance. Spray drying is also possible. The dried liver powder thus obtained is coated with a coating agent by suitable coating means. As this coating means, any means used for coating powder can be used, but from the viewpoint of efficiency, it is preferable to use a fluidized bed granulation dryer. According to this dryer, granulation is performed at the same time as drying, and the granular product obtained here is in a preferred form from the viewpoint of handling. In addition, when coating or granulating, an appropriate binder or film-forming aid that also serves as a pinter, such as carboxymethyl cellulose salts, seasonings and/or various vitamins, unsaturated fatty acid glycerides, minerals, etc., may be used in combination. , can be added.

Since the product of the present invention is coated with a film of liver powder or protein, there is no direct contact between minerals and unstable liver components, and the whole product is isolated from the influence of oxygen, which allows for long-term use. Another important feature in practice is that the depletion of valuable liver components is kept to a minimum even during storage.

On the other hand, 150 g of Twoin was dissolved in 50% isopropanol, and this solution was used to sprinkle, mix, and dry the liver powder contained in a fluidized bed granulation dryer to perform primary conniting. Next, add 15g of the seasoning and salt mixture to 33g of water.
After coating in the same manner while spraying a solution dissolved in 00ml onto the first coating, a second coating was performed using a solution of 50g of zein dissolved in 90% IQ Improper Tool until the solvent was completely removed. After drying until volatilization, it was sieved and the portion that passed through a 20-mesh sieve but did not pass through a 100-mesh sieve was collected. The coated liver food obtained here is a tasteless and odorless small granule containing 77.5% of dried liver powder, 20% of coating agent, and 2.5% of binder and seasoning. Yield is 94

In the above examples, casein can be used in place of zein in the form of an aqueous solution of sodium caseinate (sodium casein), but especially when used in conjunction with zein's Impropatol spray, it helps control the particle size of the final product.
