Abstract

PURPOSE:Flakes of dried bonito are made so that they have relatively thick parts and thin parts in irregular shapes, thus permitting easy preparation of soup stock and showing good texture and flavors. CONSTITUTION:A dried bonito 8 is charged from the pressing hopper 7 to the rotatory shaving disk 2 at an angle. The dried bonito is shaved by the shaving edges 4, as coming into contact with narrow and flat parts 6 between grooves 5 on the shaving disk 2 and the resultant flakes pass through gaps between the shaving edges and the openings 3 for mounting the edges to the outside. Since the shaving disk has grooves and flat parts, the resultant flakes have relatively thick parts and thin ones, further the thin parts are rubbed with the flat parts, resulting in irregular shapes.

Detailed Description of the Invention This invention is a method for cutting sand. Conventionally, a cylindrical front blade was attached to the side of a rotary body with a disk shape, and the 14 m of material to be cut was pushed into this even shape. Rotating the rotary cutting body while pressing K to cut the dynamic oblique part, or use a rotary blade with a plurality or multiple cutting blades formed on the outer periphery to cut it 111 [Press the oblique part] However, in the conventional O-cutting method such as the former, the entire cutting surface of the raw material joint is in contact with the side surface of the electric cutting body during the cutting operation. Frictional heat is generated between the joints and the side surface of the rotary cutting body, and the cut surface of the raw material joints becomes excessively dry, which not only makes it easy for the joints themselves to be finely pulverized by the cut stiffness, but also causes the aroma to dissipate. The latter method has the disadvantage of deterioration of quality due to carbon oxidation. Also, in the latter method, even if one or a part of the cutting blade provided on the outer periphery breaks, the entire rotary blade must be replaced.
Therefore, the maintenance cost of the device itself is high. Therefore, the purpose of this invention is to develop a PAb that does not have the above-mentioned disadvantages of dissipation of powdered raw aroma caused by O friction heat during O a transition and deterioration of quality due to oxidation. It is said that the section is provided.

Therefore, it is preferable that concentric grooves are provided on the side surface of a rotary cutting machine to which a plurality of cutting blades are attached, and the material knots to be cut are placed on a narrow flat surface extending over the six grooves. It is manufactured using a device that is configured to make sliding contact only with the groove, and has a relatively thick tip that corresponds to the groove on the side surface of the rotary cutting machine, and also corresponds to the narrow flat part along the groove. The tip is relatively rounded and has an irregular shape that is not flat.

Further, in a cutting tool according to another object of the present invention, concentric grooves are preferably provided at regular intervals on the side surface of the rotary cutting machine, and cuts are made on the surface at regular intervals. Several cutting blades are installed, and each cutting blade can be used as a can opener.
The indentations are manufactured with a device that is positioned on the flat part between the grooves of a rotary cutting machine, and are formed into strips with a tip size corresponding to the desired dimensions, that is, the spacing between the cuts of the cutting blade, and The central part corresponding to the groove is relatively resonant, and the parts on both sides are thin and irregularly shaped.

As described above, in the cutting joint according to the present invention, the contact between the rotary cutting machine and the raw material joint is carried out on the narrow flat part along the groove, so the frictional heat during rotary cutting is different from that of the conventional full contact type. 〉It is much less likely to cause the powdering of the shaved knots caused by excessive drying due to frictional heat, the loss of aroma, and the deterioration of quality due to oxidation. The cut pfIB#'i according to the present invention manufactured using a cutter blade with a sharp edge, since its both sides are rubbed by the narrow flat part between the grooves of the rotary cutting machine during cutting, the central part, that is, the upper part of the groove. The temperature of the part that has passed through and been scraped is high and is pressed strongly, so the thickness on both sides is thinner and wrinkled, resulting in an irregular shape instead of a straight line. The crust is good, the soup stock is rich in Yamanaka, and the texture is good.

The operation of the apparatus of the present invention constructed as described above will be briefly explained. The rotary cutting machine 2 #i is rotated by the drive motor in the direction of the arrow M at a desired rotational speed, and the raw material node 8 to be cut is Suppose that the material is supplied at a certain angle of inclination to one side surface 2a of the rotary cutting machine 2. In this state, the cutting end surface of the raw material knot 8 is cut into a narrow flat part 6 between the groove 5 and the structure 5. The blades are sequentially cut by each of the planer blades 4 while in contact with the rotary cutting machine 2, and the thus-cut shavings are sent to the other side of the rotary cutting machine 2, that is, inside, through the gap between the blade tip and the planer blade mounting port 3. , and can be collected in a collecting hod (not shown) and sent to a processing device for bales. Figure 3 shows the second part of the apparatus for producing katsubushi according to the present invention.
Part 0 of the embodiment is shown, and the device itself can be constructed exactly like the structure 40 shown in FIG. 1
s is provided, and the can opener 1s is arranged to be located on the narrow flat part 6 between the adjacent grooves 5. Therefore, the device according to this variant embodiment has a can opener 1s with an interval of 130 between the cuts of the planer blade 12. Since raw material knots are cut, it is possible to directly obtain cut knots by cutting them into relatively small pieces. Even in this embodiment, the dimensions of the planer blade 120, the spacing of the planer blades, the dimensions of the grooves 5, etc. can be designed arbitrarily. You can
