[Detailed description of the invention] (Field of industrial application) The knife for cutting fish flakes of the present invention is used to obtain shaved flakes by cutting fish flakes such as bonito flakes and dried sardines.

(Prior Art) It is desirable that the dried bonito flakes be as thin as possible and uniform in thickness and shape in terms of meltability and texture when used in cooking.

Furthermore, in order to keep the flavor of the bonito flakes intact, it is necessary to minimize exposure of the bonito flakes to the air and to minimize the frictional heat generated during cutting.

Conventional cutting equipment involves attaching a planer blade c to a planar cutting table a as shown in Fig. 1, and cutting by pressing a fish flake d against the planer blade c and sliding it, or as shown in Fig. 2. A planer blade c is attached to a rotary plate b and the rotary plate b is rotated for cutting, or a thin blade is attached to a rotary disk and the rotary disk is rotated for cutting as in 1920 Utility Model Application Publication No. 3797. , Registered Utility Model No. 19646, a plane was attached to the inside of a plane stand, the plane blade was made to protrude from the outer periphery of the plane stand, and the plane stand was rotated for cutting.

(従来技術の問題点) 従来の切削装置は次のような問題があつた。(Problems with conventional technology) Conventional cutting devices have the following problems.

(1) All of the above are planer c, thin blade,
Since the cutting edge of the plane is made to protrude from the grooves of the cutting table a, the rotary plate b, the rotating disk, and the plane table, it was not possible to cut the cutting joint thinly to 1/100 mm or less.

(2) かんな刃c、薄刃、鉋を平板状の回転板や回

(2) Since the planer blade c, thin blade, and plane are attached to a flat rotating plate or rotating disk, the fish joints come into contact with the rotating plate between the blades, generating frictional heat and causing the rotating plate to rotate. At temperatures as high as 60°C to 80°C, the bonito flakes oxidize, losing their flavor and color, and deteriorating the quality of the bonito flakes.

(3) かんな刃、薄刃、鉋と溝との間にどうしても

(3) Because there is inevitably a gap between the planer blade, thin blade, and plane and the groove, it is easy for shavings and shavings to become clogged, and the thickness of the shavings is different before and after clogging, resulting in a uniform shape and uniform thickness. It becomes difficult to obtain dried bonito flakes.

(4) 削り節が詰ると刃の切れ味が悪くなるため刃

(4) When the kerifubushi becomes clogged, the blade becomes less sharp, which causes excessive force to be applied to the blade, causing the blade to break or the rotary plate to become distorted, making the thickness and shape of the kerifushi increasingly uneven.

(5) 削り節が詰ると非衛生的であり、特に梅雨時

(5) Clogged bonito flakes are unhygienic and can cause bacterial growth, especially during the rainy season or in hot and humid work environments.

(6) Planer blades, thin blades, and planes have high cutting resistance, resulting in severe blade wear.In factories that mass-produce kerifushi, even carbide blades wear out in about three days, and the surface of the kerifushi loses its burrs. After a week, it will hardly wear out. Especially when it comes to ordinary knives.
If you use time, it will become inexhaustible. Therefore, in order to constantly cut kerifubushi to a thickness of, for example, 2/100 mm, it is necessary to adjust the protrusion of the planer blade approximately every 10 minutes.

(7) 刃の突出寸度を調整するためには一々削り機

(7) In order to adjust the protrusion of the blade, it is necessary to stop the cutting machine and stop the cutting operation, and the more the number of planer blades is, the longer the length of the planer blade is. The longer it is, the longer it takes to adjust, which reduces work efficiency and productivity.

(Means for Solving the Problems) As shown in FIGS. 3 to 9, the knife for cutting fish joints of the present invention has a circumferential surface 2 of a base body 1 having a circumferential surface 2.
A plurality of blade bodies 3 formed separately from the base body 1 are attached to the outside of the base body 1 along the axis of the base body 1 or obliquely to the axis of the base body 1 at appropriate intervals in the circumferential direction of the base body 1.

(Operation of the invention) A rotary shaft such as a speed reducer is inserted and fixed into the shaft hole 4 of the cutting blade of the invention, and the blade is rotated by the speed reducer. When pressed perpendicularly or obliquely from one end, the fish joint is cut into a long and thin piece with the width of the small single blade body 3.

(Example) As an example of the present invention, what is shown in Figure 3 and below is as follows.
Blade bodies 3 are attached at uniform intervals to a circumferential surface 2 of a base material 1 having a shaft hole 4. The blade body 3 is attached vertically along the axis of the base body 1 or obliquely to the axis as shown in FIGS. 4 to 6.

The blade bodies 3 in Fig. 4 A and B are formed into vertically long and straight plate shapes, and the blade bodies 3 in Fig. 5 A and B are formed vertically and slightly obliquely, and Fig. 6 A, The one shown in B is vertically long and curved so that the cutting edge 5 side protrudes outward. In addition, the blade 3 shown in each A of FIGS. 4 to 6 has cuts 6 at regular intervals in its longitudinal direction.
The cutting edge 5 is made intermittently by inserting it.

Alternatively, as shown in FIGS. 7 and 8, a large number of protrusions 9 may be provided protruding from the outer periphery of the base body 1 at uniform intervals, and the blade 3 may be attached to the top 10 of each protrusion 9.

(1) Since the blade body 3 is attached to the curved circumferential surface 2, fish segments do not come into contact with the base body 1 between the blades. For this reason, as in the above-mentioned example, when the fish flakes come into contact with the rotating plate between the blades, the frictional heat oxidizes the flakes, causing them to lose their flavor and color, resulting in a deterioration in the quality of the flakes. Never.

(2) Since the blade 3 is attached to the outside of the circumferential surface 2, there is no need for a groove to make the cutting edge 5 of the blade 3 project onto the circumferential surface 2. There have never been cases where shavings or shavings get stuck between the shavings and the shavings, which is unhygienic, or the thickness and shape of the shavings become uneven.

(3) If the cutting edge 5 of the blade body 3 is made intermittent and the length of the interrupted cutting edge 5 is matched to the length of the desired shavings, the shavings to be cut can be packed in bags as they are. . Therefore, the working process from cutting to bagging is simplified and the time required is shortened, so the time that the shavings are exposed to air is reduced, and as a result, quality deterioration is also reduced.
