Abstract
PURPOSE: An oil-in-water type emulsion, obtained by adding an emulsifying agent, e.g. a fat or oil or glycerol monoester of a fatty acid, having specific characteristcs, and a phosphate salt in a specified proportion to a fat or oil, having the high emulsification stability, and resistant to heat shock and mechanical shaking.
CONSTITUTION: In obtaining an oil-in-water type emulsion consisting of a fat or oil, a nonfat milk solid content and water as principal constituents, 30W50wt% hardened fat or oil, e.g. hardened repeseed oil, containing 2W50wt% erucic acid and having a melting point of 30W42°C measured by the heating method and a trans acid content of 30W60wt% is incorporated with 0.5W2.0wt% glycerol monoester of a fatty acid, 0.1W1.2wt% soybean phospholipid, and if necessary. 0.05W0.08wt% sucrose ester of a fatty acid, each being based on the fat or oil, and 0.07W0.3wt%, based on the total weight, phosphate salt to give the aimed creamy composition. A whipped cream having a high overrun in whipping and improved shape retaining property can be obtained.
