Abstract
PURPOSE: To prepare an instant soft hamburger having beautiful appearance, immediately eatable by only heating it on a frying pan, etc. in a short time, by seasoning raw ingredients of hamburger and forming an orange coat of solid colored fats and oils on its surface.
CONSTITUTION: Raw seasoned ingredients of hamburger which are prepared conventionally are molded into a desired shape and soaked in an edible oil heated at 80W100°C for several tens minutes to carry out sterilization under heating, and cooled by a cooler for several tens minuts to give a heat-treated hamburger. While seasoned colored fats and oils or colored fats and oils are prepared from edible palm oil having a melting point 38°C, soy, tomato processed food, e.g., tomato ketchup, puree, etc., emulsifying agent, etc. by a proper method and kept at 45W50°C in molten state, and the heat-treated hamburger is instantly coated with the fats and oils.
