Abstract
PURPOSE: A bacterium in Bacillus is cultured in a medium containing metal salts to collect a saccharide salt with a higher substitution degree than a certain level with one or more kinds of metals, such as Na, K, Mg and Ca, whereby a salt having activity of preventing the rise of serum cholesterol is obtained.
CONSTITUTION: A culture medium is prepared by adding glucose, lactose, pepton, yeast extract and others and further cations such as Na, K, Mg, or Ca so that the total amount becomes at least 0.01 equivalent per liter in the medium. Then, Bacillus polymyxa 271 (FERM-P1824) is cultured in the resultant medium under aerobic conditions. The culture mixture is subjected to ethanol precipitation, ultrafiltration and other operations to effect purification to produce the objective polysaccharide salt of more than 0.4 substitution degree defined by the equation.
