Abstract

PURPOSE: To collect a novel aminopeptidase capable of decomposing the amide linkages on the carboxy side of an L-amino acid having free amino groups from a culture, by cultivating a microorganism belonging to the genus Streptomyces.
CONSTITUTION: A microorganism, e.g. Streptomyces sapporonensis ATCC21532, of the genus Streptomyces is cultivated in a culture medium containing an ordinary starch, sucrose, peptone or meat extract, potassium primary phosphate, magnesium sulfate, etc. at 25W37°C and a pH of 5W8 for 1W9 days. After removing the microbial cells, the culture is precipitated with an organic solvent or salted out, and the resultant precipitate and purified by the dialysis, adsorption and desorption to give a novel aminopeptidase capable of decomposing amino linkages on the carboxyl side of an L-amino acids having free amino groups.
