Abstract

PURPOSE: To paprika is treated with aqueous alkali to saponify only the fat component selectively, then treated with an organic solvent and deordorized by steam distillation, thus producing the titled pigment that has good color-developing properties and no strange odor with industrial advantage.
CONSTITUTION: About 20W40% caustic soda aqueous solution is added to paprika (oleoresin) at room temperature, preferably by an amount of about 1.0W1.5 times the theoretic one caluculated from the saponification value and they are stirred for 5min and stood for more than 6hr. Water or hot water is added to the resultant soap-like solid containing the pigment by an amount of about 3W5 times that of the solid to form a particle dispersion. Sodium chloride and/or sodium sulfate are added to the dispersion to separate granular soap and it is dried. Then, the pigment is extracted from the soap-like substance with an organic solvent such as acetone, then the solvent is removed to collect the concentrated pigment. Further, a food oil such as coconut oil is added and they are subjected to steam distillation to effect deodrorization to give the objective pigment.
