Abstract

PURPOSE: To prepare a nontoxic insoluble enzyme with very slight enzymic inactivation, by using a prolamine as an enzymic carrier, and applying a specific organic solvent thereto.
CONSTITUTION: A prolamine, e.g. zein or gliadin, is dissolved in an organic solvent selected from ethylene glycol, propylene glycol, methyl cellosolve, ethyl cellosolve, monoethanolamine, dimethylformamide, dimethyl sulfoxide and dimethylacetamide, and an enzyme, e.g lipase or protease, is dispersed or dissolved in the resultant solution of the prolamine in the solvent. The resultant dispersion or solution is then spray dried or injected into a coagulating solution, e.g. water, methyl alcohol or acetone, miscible with the solvent, and incapable of dissolving the prolamine to deposit and coagulate the aimed insoluble enzyme.
