Abstract
PURPOSE: Two kinds of chocolates colored differently from each other are casted in order into a mold with a decoration pattern engraved to produce chocolate with a three-dimensional decoration pattern of color-different letters or designs.
CONSTITUTION: The base butter for the first chocolate and the second one of a different color from the first one are selected so that at least 60wt% becomes common and the content is adjusted to 30W40wt% in both chocolate materials. The resultant first chocolate is casted into a mold with a decoration pattern engraved and the surface is scraped, then the chocolate is rapidly cooled to 18W 22°C. The second chocolate is susequently casted onto the first chocolate casted, then cooled and released from the mold.
