Abstract

CONSTITUTION: A microorganism, e.g. Agaricus campestris CBS20649 strain, belonging to the genus Agaricus, and having the ability to produce pyruvic acid is cultivated. In the preliminary cultivation, the microorganism is cultivated in a culture medium containing glucose, yeast extract, malt extract, polypeptone, etc. The resultant culture is then inoculated into a culture medium for the regular cultivation containing glucose, polypeptone, KH2PO4, KC1, CaCO3, etc. and cultivated. The preliminarily cultivated microbial cell is homogenized or a viscosity increasing agent is added to the regular culture medium to prevent the formation of microbial cells in pellets having a nonuniform diameter. The aimed pyruvic acid is collected from the culture medium in high yield.
