Abstract
PURPOSE: To remove salt from salt-preserved meat keeping the original characteristics of the meat, by subjecting the salt-preserved meat to the processes comprising leaving at rest, cutting to large blocks, dialysis, massage, and leaving to stand.
CONSTITUTION: Frozen salt-preserved meat is thawed by leaving in a refrigerator at rest for 3W10 days at 0°C±5°C, and cut to large blocks of 2W5cm thickness. The block is put in a bag made of dialysis membrane or a container having dialyzing function together with 10W30% water vased on the weight of the meat, and dialyzed for 1W5 days in running or standing water at ≤8°C. After the dialysis, the meat is massaged, and left in a refrigerator for 1W14 days to effect the post-aging.
