Abstract
PURPOSE: To keep the freshness and the color of a food for a long period, by killing or suppressing the various microorgnisms grown in the food in a refrigerator, and at the same time, suppressing the oxidative action causing the discoloration or rancidification of food, or preventing the rancidification of oils or fats contained in the food, or preventing the denaturation of proteins.
CONSTITUTION: A quality stabilizing agent obtained by mixing 50W100pts.wt. of ethyl alcohol, 0.02W50pts. of an antioxidative reducing agent such as L-ascorbic acid, erythorbic acid, etc., and 5W30pts. of protein denaturation preventing sequestrant, is evaporated, and the vapor is supplied to the food refrigerating chamber together with humid air blasted into the chamber . The sequestrant is e.g. sodium metaphosphate, sodium pyrophosphate, etc., and plays the role of stabilizing the antioxidative reducing agent and suppressing the decomposition of proteins and the resultant proliferation of bacteria.
