Abstract

PURPOSE: To obtain a mugicha (ptisan), having the natural flavor and color of the decocted mugicha, and capable of being percolated even with cold water without using any additives, by mixing raw material barleys with different degree of roasting and then pulverizing the mixed barleys, or pulverizing and then mixing the barleys.
CONSTITUTION: Raw material barleys, preferably with a husk thereof, is gelatinized or without gelatinization roasted. In this case, one of the raw materials is roasted under strong heating conditions of 230W300°C to give a coloring barley. The other raw material is roasted under relatively weak heating conditions of 150W225°C to give a flavoring barley respectively. The resultant coloring and the flavoring barleys are mixed at a weight ratio of 1:2W1:11 before or after the roasting to give the aimed mugicha (ptisan). The barely component of the resultant mugicha can be extracted even with cold water and has a flavor equal to that of the conventional decocted mugicha.
