Abstract

PURPOSE: To measure the concn. of fruit sugar with rapidity and simplicity, by fixing D-mannitol dehydrogenating enzyme onto a current-collecting body.
CONSTITUTION: At least by using D mannitol dehydrogenating and reducing-type enzyme, fruit sugar is reduced in a solution 9 containing fruit sugar, and variation of the concn. of reducing-type coenzyme conjugating this reaction is electrochemically measured by an electrode 6. As for the way of measuring variation of the concn. of the reducing-type coenzyme electrochemically, there is the way of doing it by measuring current of an anode for oxidizing electrochemically the reducing-type coenzyme as well as the way of doing it by measuring current of a cathode for the electrochemical reduction of the coenzyme which has been converted to oxidizing type by the enzyme reaction.
