Abstract
PURPOSE: To transport raw fish without causing cracking or discoloration at the surface of the fish bodies, by putting the raw fish in a precooled container, spraying liquefied gas into the container to effect freezing of the fish, and coating the fish with a thin ice layer.
CONSTITUTION: Raw fish bodies are placed on the shelves 10 on both sides of the path in the container 1 which is precooled with a refrigerator 2. The lid 30 attached to the ventilation hole 3a of the openable door 3 is opened, and liquefied gas is sprayed through the intake port 4a of the container 1 into the container, intermittently, keeping the temperature to ≥-100°C throughout the container to effect the freezing of the surface of the fish body. A larger amount of liquefied gas than sprayed before is sprayed intermittently into the container 1 to freeze the fish to the core. The spray of the liquefied gas is stopped, the door 3 is opened, the surface of the fish is sprinkled with water to form a thin ice layer on the surface, the door 3 is closed, the liquefied gas is sprayed again and at the same time, the refrigerator 2 is put in motion until the core temperature of the fish reaches the preset temperature. The supply of the liquefied gas is stopped, and the container is transported.
