Abstract
PURPOSE: To obtain a frozen health food having a preventing effect on hypertension and scorbutus, by incorporating a combination of linoleic acid as a fat or oil source and ascorbic acid as a sour agent with a polysaccharide of a tamarind seed as a stabilizer.
CONSTITUTION: A frozen health food is prepared by incorporating 0.3W7wt% linoleic acid as a fat or oil source, 0.2W10wt% ascorbic acid as a sour agent and 0.1W 0.8wt% a polysaccharide of a tamarind seed as a stabilizer, and if necessary 5W 18wt% maltose, 1W10wt% fructose and 1W10wt% glucose as a sweetening agent. The polysaccharise of the tamarind seed is obtained from the seed of the tamarind growing in the tropics, e.g. Southeast Asia such as India, Ceylon and Burma, and will not cause shrinkage even in the case of much air included in freezing the food.
