Abstract

CONSTITUTION: A juice obtained by squeezing grape is placed in the desalting chamber 3 formed between cation-exchange membrane 1 and anion-exchange membrane 2 and an electrolyte solution is placed in concentration chambers 4 at the both sides of the desalting chamber 3 and electrode chambers 5 on both ends. When a potential difference is loaded between the electrode chambers, the calcium ion in the grape juice in the desalting chamber 3 moves toward the cathode, passes through the cation-exchange membrane selectively and gradually accumulates in the concentration chamber 4. When clelery is used, the nitrate ion in the celery juice moves toward the anode on the electric dialysis, passes through anion-exchange membrane selectively and accumulate in the concentration chamber 4.
