Abstract

PURPOSE: Grushed strawberry pulp is subjected to enzymatic treatment by the use of pectinase at 30W45°C for 30W60min, then squeezed and filtered to produce clear strawberry juice inexpensively in high yield.
CONSTITUTION: After pulps of calyx-removed strawberry are washed, they are crushed by means of a hammer mill or pulp finisher. The crushed pulp is combined with 0.005W0.03wt%, based on the pulp, of pectinase and subjected to enzymatic treatment at 30W45°C for 30W60min. Then, the pulp is squeezed by the used of a device such as bag filter as soon as possible and the filtrate is passed through a kieselguhr filter agin to obtain the clear strawberry juice. This process can increase the final yield of juice from 70W76wt% in the conventional process to 82W88wt% on the basis of the strawberry pulp.
