Abstract

PURPOSE: To inactivate a proteolytic enzyme derived from a sporozoan and improve the flesh thereof, by bringing the flesh of a fish parasitized with a sporozoan into contact with an oxyacid oxidizing agent or SH reagent.
CONSTITUTION: The flesh of a fish parasitized with a sporozoan, e.g. a Pacific hake, merluza (Merluccius Capensis) or Pacific halibut, is brought into contact with an oxyacid oxidizing agent, e.g. sodium bromate, potassium bromate or sodium chlorate, or an SH reagnet, e.g. monoiodoacetic acid.
