Abstract

PURPOSE: To prepare the titled dressing which can be converted to the emulsified dressing easily by shaking and keeps the emulsified state for a relatively long period, by adding xanthan gum to the water layer of the dressing thereby adjusting the viscosity of the water layer within a specific range.
CONSTITUTION: The viscosity of the water layer of a separation-type dressing is adjusted to 200W800cp (20°C) by adding 0.15W0.5% of xanthan gum to the layer. When the amount of the xanthan gum is less than 0.15%, the dressing is rapidly demulsified after shaking and an emulsion cannot be obtained. If the amount is higher than 0.5%, and the viscosity of the wave layer exceeds 800cp, the water layer cannot be mixed completely with the oil layer simply by shaking with hand. The dressing may contain particulate spices. When the dressing is emulsified by shaking, the spices are uniformly dispersed in the emulsion and the taste and the flavor of the spices are kept unchanged.
