Abstract
PURPOSE: To prepare liquors having excellent taste and flavor in a short time, by removing the impurities in the liquors by the ultrasonic "Zet" treatment at ultra-high pressure, and then carrying out aging and extraction by ordinary ultrasonic treatment.
CONSTITUTION: Impurities in liquor are removed by treating the raw liquor 18 with an ultrasonic "Zet" treating apparatus which comprises a "Zet" treating part 4 generating ultra-high pressure (about 647kg/cm2) and furnished with a paraboloidal reflector 19, a lower tank furnished with an ultrasonic vibration element 24 cooled with water 13 circulating through the pipe 10 and the pipe 14, and an ultrasonic radiation-transmitting sealing plate 22 which separates the upper liquor 18 to be treated from the water in the lower tank. The liquor 18 is charged into the upper tank through the pipe 17, jetted through the "Zet" treating part 4, and collected in the refined liquor reservior 16. The gas separated from the liquor jet is exhausted from the outlet 1. The refined liquor is sent through the outlet 6 to the next treating device which comprises an ultrasonic generating tank filled with water and devoid of the "Zet" treating part, and a liquor tank, to effect the extraction and the aging of the refined liquor.
