Abstract
PURPOSE: To prepare finely divided powder of odorless peanuts with the harshness removed, by grinding peanuts which are soaked in hot water and swollen, followed by making them uniform.
CONSTITUTION: Raw peanuts with red skin are soaked in hot water of 70W100°C for 4W12hr, swollen, the red skin is peeled and water is removed. The peanuts are then powdered by a grinder while 50W80wt% of hot water at 100°C being added to give a suspension of finely divided powder of peanuts, which is made uniform by a homogenizer, dewatered by a centrifugal separator to a water content of 20W 50wt%, and dried to give the finely divided powder of peanuts with a particle size of 300W400 mesh.
