Abstract
PURPOSE: To prepare a curled rice cake with reduced breakage loss, by placing a piece of cut rice cake pastry on a metal net, and bending the pastry by its own weight, followed by drying, and baking.
CONSTITUTION: Rolled rice cake pastry sheet is cut to desired shapes with a cutting roll, and the cut pastry 1 is placed on a metal net 2 without delay. The pastry 1 enters into the mesh 3 of the net 2 to afford a curled rice cake pastry 4. The water content of the pastry is about 40W60%, pref. about 45W54% to effect the desirable curling. The curled pastry is dried on the metal net 2 to a water content of ≤35%, optionally dried in a drier, etc., and baked.
