Abstract
PURPOSE: Thin pieces of meat are spread on a sheet of processed paper which is laid on the reed screen and the ingredient containing ground meat, vegetables, a binder of starch, protein food and salt is placed on the meat sheet, then they are rolled to give the objective hamburgerlike food product.
CONSTITUTION: Thin sheets of meat 3 are spread on a sheet of processed paper 2 that is laid on the reed screen 1 so that the end of each sheet overlaps the end of the next sheet. Then, the ingredient that is made by mixing ground meat, finely cut vegetables, bread flour and starch as a binder, protein food such as egg, a small amount of salt and chemical seasonings is placed on the meat sheet and they are rolled in the same way as rolled sushi is made into a sticklike form. The reed screen is removed, the rolled product that is covered with the processed paper sheet is frozen in a refrigerator to -25°C for 1hr and the roll is cut into pieces of equal thickness to usual hamburger. They are further frozen in a freezing chamber by cooling to about -25°C for 4hr.
