Abstract

PURPOSE:To reduce the thawing time and to prevent the deterioration of quality, by freezing the moisture in a thawing chamber, evacuating the chamber and thawing a frozen material with steam supplied thereto. CONSTITUTION:A shelf 3 having a frozen material thereon is placed in a thawing chamber 2, and a refrigerant gas is fed from a gas cylinder 18 through a nozzle 15 and jetted in a cooling path 14 by the command of a control device 26 to freeze the moisture i the thawing chamber 2.The thawing chamber 2 is then evacuated by a vacuum pump 7 to a given degree of vacuum, and a valve 6 is closed to supply water from a water supply tank 11 to a steam generating part 8. The steam generating part 8 is heated by a heater 12 to thaw the frozen material by a latent heat of condensation of steam. The moisture remaining in the thawing chamber 2 or contained in the frozen material can be frozen, and the degree of vacuum in the thawing chamber 2 can be regulated to the desired value rapidly. Thus, the thawing time can be reduced, and the good quality of the frozen material can be maintained by the low-temperature thawing thereof.
